This is a delicious "shortcut" dinner. You can transform your favourite frozen ravioli into something gourmet, that's just perfect for a weeknight dinner.
The inspiration for this dish came from a meal in the Minneapolis airport actually. I was travelling by myself, and had a bit of time so I ordered this unexpectedly delicious meal. When I came home, I had to recreate this for my family.
There are no quantities given in this recipe, so use as much or as little as you like according to your taste. My favourite frozen ravioli has unfortunately been discontinued from Costco, so now I've been using PC Black Label fresh Ravioli from Superstore. I also use Wild Argentine Shrimp for this recipe.
Cook ravioli according to package directions. Drain when ready and toss in a generous amount of olive oil. Set aside.
Chop a few cups of fresh arugula, and layer on a serving platter of your choice.
Saute shrimp until cooked in garlic butter.
Chop fresh tomatoes and drain excess liquid.
Now, arrange ravioli on top of arugula in a single layer.
On top of ravioli arrange shrimp.
Add chopped tomatoes
Sprinkle italian seasoning and freshly grated parmesan cheese over top
