Finnish Pancakes, Hoito Style

If you haven’t tried a Finnish pancake, you are in for a treat. Covering the surface of your entire plate, these pancakes live somewhere between pillowy soft yet impossibly thin. Think: crepes but softer and airier.


Ingredients:

5 eggs

6 cups milk

2 teaspoons salt

4 tablespoons granulated sugar

3 cups flour


  1. In a large mixing bowl, whisk together eggs and milk.

  2. Add salt and sugar, whisk all together.

  3. Slowly add flour to egg mixture.

  4. Ladle batter into heated, greased pan. Tilt pan to achieve shape and thickness.

  5. Let brown and when bubbles appear on surface, flip to cook the other side.
