Mexican Beef Birria is a popular recipe that uses beef that’s braised in a broth of chile peppers, tomatoes, onion, garlic, and seasonings, then shredded and served. We also use the meat and consomé to make Birria tacos, or as a stew or even in ramen. The tacos are how I first experienced Birria, and it was the ultimate upgrade from the usual tacos made with ground beef. To start, you need to prepare your Birria, recipe for that is here.
Now it's not necessary, but I would recommend making homemade corn tortillas to make this recipe. My recipe is here. If you don't make your own, buy the best ones you can find.
You'll need some cheese, and although I'm a fan of use what you have, try to find some queso fresco, cotija or even monterey jack.
To assemble the tacos, prepare your ingredients and heat your favourite cast iron skillet.
How to Assemble Beef Birria Tacos
Step One: Dip your tortilla shell in the consomme, and lay the shell in the heated skillet.
Step Two: Add shredded or crumbled cheese to your shell.
Step Three: Add a spoonful, approximately a heaping tablespoon, of meat to your shell. (depending on the size of your tortilla)
Step Four: Fold shell in half, and flip, frying on both sides.
Step Five: Serve with finely chopped white onion, fresh chopped cilantro and a side of consomme.
