Herb Infused Vinegar
Try preserving a taste of your summer garden for your winter meals by making herb infused vinegar. This delicious vinegar is a tasty addition to salads, meat marinades and drizzled over fish.Find a jar with a tight fitting lid. Make sure it’s clean and dry.
Add your favourite fresh herbs that have been rinsed and thoroughly dried. For this combo, I added basil, oregano, rosemary and garlic chives.
Top up with vinegar. My favourites are champagne, white wine and regular white vinegar.
Close the jar with a tight fitting lid. Let sit out of direct sunlight for 1-3 weeks. Shake every few days. Taste occasionally. When desired flavour strength is reached, remove herbs from vinegar, and transfer to a new clean jar.
