Hamburger Soup

This one pot wonder is full of beef, barley and vegetables guaranteed to warm you from the inside out.

Hamburger Soup
Recipe type: Soup
  • 1½ pounds lean ground beef
  • 1 medium onion, chopped
  • 1-28 ounce can diced tomatoes, with their juice
  • 2 cups water
  • 4 cups beef stock
  • 1¼ cups strained tomatoes (passata)
  • 2 tablespoons tomato paste
  • 4 carrots, sliced
  • 3 stalks celery, chopped
  • 2 teaspoons dried parsley
  • ½ teaspoon dried thyme
  • ½ teaspoon dried marjoram
  • ½ cup pot barley
  • salt and pepper
  1. In a large soup pot, brown beef and onions.
  2. Add remaining ingredients. Cook over medium heat, stirring occasionally for 2 hours.
