Sunny Lemon Squares
  • 1 cup flour
  • 1 cup shredded coconut
  • ½ cup icing sugar
  • ½ cup butter (at room temperature)
  • 6 eggs
  • 1 cup fresh lemon juice
  • ½ cup flour
  • 2¾ cups sugar
  1. Preheat oven to 350.
  2. Butter and line a 9x13" dish with parchment paper.
  3. In a large bowl, combine 1 cup flour, coconut, and icing sugar until mixed. Cut in butter using your hands or a pastry blender, until mixture resembles coarse crumbs. Turn into prepared baking dish and press evenly over bottom. Bake until crust just starts to turn golden, check after 15 minutes, but it may take a full 20 minutes. Remove from oven.
  4. Reduce oven temperature to 325.
  5. In a large bowl, whisk eggs with lemon juice. Mix flour and sugar together. Whisk flour and sugar into egg mixture. Pour over hot baked crust. Bake for 20-25 minutes.
  6. When cool, sprinkle with icing sugar and cut into 24 squares.
