Chicken Salsa Soup with Quinoa (Vitamix Recipe)

I’ve had the Vitamix for a week now, and I’ve made this soup twice. It is THAT good. Fresh, healthy and really easy to make.

All the prep for this soup was done in my Vitamix! Easy and healthy!!


It makes a full pot, which is great because you will want leftovers.

Step 1: Prep

Buy a rotisserie chicken and strip the meat from the carcass. Set the meat aside in a soup pot. Discard the carcass. Cook 3 cups of quinoa according to the package instructions. If you’re anything like me and have a stash of it in your fridge, use that instead.

In your large blender container, add 1 yellow, 1 red and 1 orange bell pepper, cut into chunks. Add 1 jalapeño pepper, 1 red and yellow onion, chopped, as well as 4 cloves of garlic and 1 liter of organic chicken stock.

Step 2: Blend

Put the lid on your Vitamix and select Variable 1. Press start and slowly increase speed to 3 or 4, allowing the vegetables to chop. Once the desired consistency is reached, stop and pour into your soup pot with the chicken.

Step 3: Prep blender 2

Add 6-8 halved roma tomatoes to your blender container. To this add 4 chopped zucchini, 4 celery stalks, 1/4 cup of packed fresh cilantro and 1/2 liter of chicken stock.

Step 4: Blend

Follow step 2 instructions.

Step 5: Prep

Add 1 chopped head of cauliflower and 1/2 liter stock.

Step 6: Blend

Follow step 2 instructions.

Final step!

Heat soup to a gentle simmer over medium heat. Season soup to taste with sea salt, pepper and paprika. In individual bowls, add a scoop or two of cooked quinoa. Ladle soup into bowls and serve!

  • This salsa soup was great! I adapted a bit for a few ingredients that I didn’t have and it was still fantastic! A real keeper for sure!
