Cheeseburger Soup

I actually really tried to come up with another name for this soup. I mean, when I first read the name on a menu, I didn’t have an overwhelming craving for it. Well it was definitely worth trying, because it’s become a family favourite. And, as you can see I didn’t change the name.

All the deliciousness of a cheeseburger in a bowl of warm, comforting soup! A new family favourite.

It has all the deliciousness of a cheesy burger, in a bowl of warm, comforting soup.

Cheeseburger Soup

Ingredients
  • 2 pounds lean ground beef
  • 2 cups diced onion
  • 4 garlic cloves, chopped
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • ⅓ cup all-purpose flour
  • 1 tablespoon dried parsley flakes
  • ½ cup pickle juice
  • 2 tablespoons yellow mustard
  • 1 litre beef broth
  • 28 ounce can diced tomatoes
  • 1 cup half and half
  • 8 ounces shredded cheddar cheese
  • optional garnish: shredded cheese, sour cream, hot sauce, diced pickles
Instructions
  1. In a large stockpot over medium heat, add ground beef. Break apart beef and add onion. Cook until beef begins to brown.
  2. Add garlic, salt and pepper; continue to cook stirring constantly for about 1 minute.
  3. Sprinkle flour over and cook, stirring constantly for 2 minutes. Mixture will be dry and flour may become slightly browned.
  4. Add parsley, pickle juice, mustard, beef broth, and diced tomatoes. Stir to combine well. Bring to a simmer. Cover and let simmer for 10 minutes.
  5. Lower heat, add half and half and shredded cheese; stir until melted.
  6. Continue cooking on low heat for another 10 minutes. Salt and pepper to taste.
