This quick and easy take on a Canadian classic is sure to become a favourite at your house. Butter Tart Squares freeze well.
Ingredients
  • 2 cups flour
  • ¼ cup granulated sugar
  • 1 cup butter
  • pinch salt
  • 3 large eggs, beaten
  • 2 cups light brown sugar
  • ½ cup butter
  • 1 tablespoon baking powder
  • pinch salt
  • ¾ cup finely shredded coconut
  • 1 teaspoon vanilla extract
  • 1 cup currents
  • 3 tablespoons flour
Instructions
  1. Preheat oven to 350.
  2. To make the crust, combine 2 cups flour, ¼ cup granulated sugar, 1 cup butter and salt. Press into a 9x13" pan.
  3. For the filling, melt butter, add eggs and all remaining ingredients. Pour over crust.
  4. Bake at 350 for 35 minutes.
