Beer Battered Pickerel

Any beer will do for this delicious recipe. I like to fry this fish in grapeseed oil, it has a clean flavour and is considered a healthy oil to fry in. Serve this with plenty of lemon wedges and homemade tartar sauce. Yes, Battered Fish is better when it’s made at home!

Beer Battered Pickerel
 
Ingredients
  • 3⅓ cup flour
  • 1¾ teaspoon salt
  • ½ teaspoon cayenne pepper
  • 2-341 ml bottles of beer
  • oil
  • 2 pounds pickerel
  • lemon wedges
Instructions
  1. Combine 3 cups of flour, salt, cayenne, and beer in a bowl. Set aside.
  2. Using the remaining flour, dredge each filet in flour, shaking off excess.
  3. Dip each filet in batter. Fry in oil, approximately 3 minutes per side.
  4. Serve with lemon wedges.
