Beer Battered Pickerel
Any beer will do for this delicious recipe. I like to fry this fish in grapeseed oil, it has a clean flavour and is considered a healthy oil to fry in. Serve this with plenty of lemon wedges and homemade tartar sauce. Yes, Battered Fish is better when it’s made at home!
- 3⅓ cup flour
- 1¾ teaspoon salt
- ½ teaspoon cayenne pepper
- 2-341 ml bottles of beer
- 2 pounds pickerel
- lemon wedges
- Combine 3 cups of flour, salt, cayenne, and beer in a bowl. Set aside.
- Using the remaining flour, dredge each filet in flour, shaking off excess.
- Dip each filet in batter. Fry in oil, approximately 3 minutes per side.
- Serve with lemon wedges.
